It's All About the Experience—LemonShark Poké

LemonShark Poké is breaking the fast-casual mold, shaking up the franchise world as the fastest-growing poké concept in the U.S. that is all about the experience.

In a sea of grab-n-go poké joints, the California-based premium brand, named for the Hawaiian native shark known as a powerful, discerning feeder, serves up crafted poké in an upscale atmosphere for a great value. Powered by the mantra, “Feed Finely,” LemonShark Poké projects to be a 500-unit franchise in the next five years.

The concept is unlike any other,” says Tobi Miller, president and chief operating officer of LemonShark Poké. “The restaurant is an inviting, modern space decorated in Japanese-tropical minimalist style that offers plenty of seating for large and small groups alike. In addition to the highest quality, fresh food, there is a self-serve beer tap and a full sake menu to create a dining experience, rather than a quick meal to get the job done. The ambiance invites customers to sit down and enjoy their meal, which is vastly different from anything else on the market.”

LemonShark Poké takes a more relaxed, upscale approach to both lunch and dinner with the best raw fish signature bowls, build-your-own options, and expanded family-friendly food offerings such as Katsu Chicken and Sticky Pineapple Chicken. The vast and varied menu extends far beyond LemonShark Poké poké bowls to uniquely position the franchise as an expanded concept.

Starters include appetizers such as tempura shrimp, egg rolls, spicy tuna crispy rice, bottomless miso soup, seaweed salad, cucumber salad, and Spam musubi. The menu also features the brand’s famous “pokérrito,” wrapped burrito-style inside a large sheet of seaweed. Those who prefer something other than raw fish or tofu pork can opt for Katsu, the traditional Hawaiian fried dish, made with chicken, Alaskan cod, coconut shrimp, or veggies.  Restaurants serve up only the finest line-caught fish available that is certified dolphin, sea turtle, and sea mammal safe.

Certifications - and are passionate about our environmental responsibility to the world,” emphasizes Miller. “Our seafood suppliers source with their partners to meet the highest level of safe practices and all of our fish is triple AAA graded. As we grow, these partnerships ensure our sustainable practices. Each of our seafoods is cut to LemonShark specs and handled with great pride!”

Each restaurant is designed to be at least 1,800 to 2,200 square feet to give customers a comfortable place to dine in an atmosphere Miller calls “Tropical Modernism.” The décor features a subtle Japanese flair and elements that honor the country’s influence on Hawaiian cuisine.

“We are truly creating a unique dining experience,” Miller emphasizes.

Founded in 2016 and franchising for just one year, LemonShark Poké is primed for rapid growth. The brand has 18 restaurants open in California, Florida, Arizona, Louisiana, Texas, New York, and more than 15 more under construction.
