Slim Chickens Crosses Another State Line, Brings Better Chicken to Nebraska

Fast-Casual Franchise Brand Opens First Location in Lincoln through Multi-Unit Development Deal

January 26, 2015 // Franchising.com // FAYETTEVILLE, Ark. - Slim Chickens, a leader in the "better chicken" segment of fast-casual restaurants, will be expanding its fresh chicken and unparalleled flavor to the Old Cheney area of Lincoln, Nebraska. The expansion is spearheaded by restaurant veterans and local franchisees, Bill and Stacie Hooks, who have long-standing roots in the Lincoln community and look forward to sharing the Slim Chickens experience with neighbors and surrounding communities.

Located at 5805 S. 58th St., the restaurant is scheduled to open on February 9, 2015 with a ribbon cutting ceremony at 10:30 a.m. This is the first of five locations Hooks plans on opening in the Cornhusker State. His second location is set to open in March.

Hooks joins Slim Chickens with a background in both food and franchising. After moving to Lincoln in 2001, Hooks began his career at Concord Hospitality as a restaurant manager. From this position, Hooks became general manager before being promoted to training manager, and finally to director of operations. Concord Hospitality is a large restaurant group, which over the course of its existence, was the platform for 45 Applebee's locations and four Famous Dave's Barbecue restaurants in Kansas and Missouri. Hooks currently serves as Vice President of Concord Hospitality, however he will be operating his majority-owned Slim Chickens locations separately.

Slim Chickens restaurants in Nebraska will offer beer to of-age guests to accompany the fresh, hand-battered chicken and homemade dipping sauces, in addition to its popular iced tea flavors.

"Nebraska knows good chicken and we're confident people will find Slim Chickens to be a unique option with our focus not just on tenders and wings, but also salads, wraps, sandwiches and our newest product Chicken & Waffles," said Hooks.
