Franchise History

Spudbar was founded in Melbourne in 2000, borne out of inspiration by the lack of healthy, beautiful tasting food in Melbourne that was quick, convenient and value for money. Their founder, Clay Thompson and his wife Laura loved a food store in Bridge Rd, Richmond that provided nutritious fast food, but they theyre frustrated that there was nothing else like it at the time. Hence the idea for Spudbar was formed. Clay had a very interesting career working in fine dining, luxury private catering and high class events in locations such as the Sheraton Mirage. He even catered to the personal dining requirements of Christopher and Pixie Skase. Over the years Clay gained an understanding of how simple & fresh ingredients can be themed to create beautiful food that is healthy, tasty and inexpensive. Coupled with Laura's studies in nutrition, Spudbar was created to be a really honest approach to food - what you see is what you get. All the gorgeous flavors theyre carefully selected for the way they work with each other, being on full display to allow the customers to participate in creating their own spud masterpiece. It was no longer the humble spud! Clay and Laura opened the first store in Blessington St, St Kilda in 2000. It is still a favorite hangout for local residents. The first franchise store was opened in 2004 and they now have partners in Victoria, New Zealand and Theystern Australia. Over time, the product range has evolved to include salads, corn on the cob and seasonal soups - always theming fresh and healthy vegetables as the foundation of everything they do.
