Fast-Casual Franchise Brand Opens First Location in Kansas City; Marks Beginning of Midwest Expansion

The Independence, Mo., restaurant, located at 4641 South Cochise Ct., is set to open Nov. 10 and is the first of five locations planned for the Kansas City market.

Prior to joining Slim Chickens as an operating partner, Herndon was "born into the restaurant industry," when he began helping his mother wash dishes at a young age at The Pizza Shoppe, a local family-owned pizza parlor. Most recently, he was involved with a national sandwich chain as both a corporate representative and local franchisee, gaining experience that he will bring to the development of Slim Chickens in his home state. After being introduced to the brand through a college friend, Herndon traveled to Arkansas to experience the concept for himself and was blown away by the restaurant chain’s success rate and national expansion plans. Herndon will focus his efforts on building strong brand recognition throughout the Kansas City area as more Slim Chickens restaurants open in Missouri.
