Costa Vida's Wave Continues to Roll in Colorado

The Fresh Mexican Favorite Opens Third Location in the State on April 14th

April 10, 2014 // Franchising.com // GRAND JUNCTION, Colo. – Costa Vida Fresh Mexican Grill opens its third location in the State of Colorado on Monday, April 14th, 2014. Grand Junction will welcome the first Costa Vida restaurant to the area, opening its doors at 2430 Patterson Road, near the intersection of 24 & Patterson Road.

In celebration of the opening, Costa Vida invites the local community to attend the Grand Opening event starting at 11am on the 14th. The first 30 guests to arrive at the new location on opening day will receive a free Costa Vida entrée every month for one year. The next 30 guests in line at the opening will receive a free entree.

The new Grand Junction restaurant will mark the second Costa Vida franchise for Judson Smedley, who also owns a location in Vernal, Utah, and plans to open a second Mesa County location in the coming years.

"I'm excited to introduce Costa Vida to Grand Junction," said Smedley. "Our restaurant's fun, light-hearted atmosphere and fresh, made from scratch food lends itself to the lifestyle enjoyed in Grand Junction. We believe Grand Junction will embrace our new addition to the community with a dining experience that lets you eat healthier while catering to a busy schedule."

Costa Vida food is made from scratch every day. The menu is inspired by the local cuisine of the Baja Peninsula Coast and features made-to-order burritos, tacos, enchiladas, quesadillas, salads and nachos. Protein choices include sweet pork, grilled chicken, shredded beef, raspberry chipotle chicken, grilled steak, chile verde, Mahi Mahi fish and shrimp. Entrées are served with cilantro lime rice and black, refried or pinto beans. The homemade guacamole, sauces, and salsas that can be used to customize any order, include Mango Salsa, Honey Habanero Salsa, Salsa Fresca, and Pico de Gallo.

With the exception of the flour and wheat tortillas, tres leches and key lime pie desserts, Costa Vida's menu items are gluten free.

The Grand Junction Costa Vida will be open Sunday through Thursday from 11am – 9pm, and Friday and Saturday from 11am – 10pm. To reach the restaurant, call (970) 639-9562.
