November 03, 2026 // Franchising.com // GREENSBORO, N.C. — Bubbakoo’s Burritos, the award-winning Mexican-fusion restaurant concept known for its bold flavors and customizable menu, has signed a two-unit franchise development agreement to bring new restaurants to Greensboro and High Point, North Carolina. The agreement follows the brand's recent entry into the state and marks its latest step in expanding its North Carolina footprint.
The new restaurants will be developed by Anil Varma, a local entrepreneur who currently operates a Mexican restaurant in Winston-Salem and brings previous experience with Dunkin'. The agreement marks Varma's first venture into franchise ownership as he prepares to introduce Bubbakoo's to Greensboro and High Point.
“Bubbakoo’s has always stood out to me for its innovative approach to Mexican-fusion, from its creative menu offerings to the freedom it gives customers to make each meal their own,” said Varma. “Joining the Bubbakoo’s franchise family is an opportunity to bring something fresh to Greensboro and High Point, and I’m looking forward to introducing the brand to these communities and contributing to its continued growth.”
The agreement follows Bubbakoo's North Carolina debut earlier this year, with its first restaurant opening in Durham in February and a second location following in Cary in July. Building on this momentum, the brand has identified Greensboro, High Point and Winston-Salem as priority markets for continued franchise development, with opportunities for an additional eight to 10 restaurants.
“North Carolina continues to be an important part of our expansion strategy as we grow across the Southeast,” said Chris Ives, CEO of Bubbakoo's Burritos. “Anil's restaurant experience, local market knowledge and passion for our concept make him a strong partner as we build on the momentum from our first two restaurants in the state.”
Beyond the Triad, Bubbakoo's is also targeting the Raleigh area for future development, with franchise opportunities available for entrepreneurs interested in bringing the concept to additional North Carolina communities.
As part of its broader expansion strategy, Bubbakoo's is pursuing franchise development in new and existing markets across the Southeast and Northeast, with a particular emphasis on Georgia, Tennessee, Kentucky, South Carolina and New England. The brand is seeking partnerships with experienced restaurant operators and growth-oriented franchisees interested in expanding their portfolios through single- and multi-unit development.
Bubbakoo's franchise model is designed for scalable growth, combining a flexible restaurant footprint with streamlined operations and comprehensive franchisee support. With locations suited for a variety of real estate formats, including inline spaces, end caps and second-generation restaurant conversions, the concept offers operators flexibility as they enter new markets. Franchisees receive assistance with site selection, training, marketing and ongoing operations.
Bubbakoo's has established a distinct position in the competitive fast-casual restaurant category through its customizable Mexican-fusion menu, featuring creative burritos, bowls and quesadillas with bold flavors and unexpected combinations. Its Signature Creations offerings and “Create Something Different” approach help differentiate the concept as it expands into new markets and reaches a broader customer base.
Since opening its first restaurant on the Jersey Shore in 2008, Bubbakoo's has grown to more than 150 locations across 17 states, building its national footprint through continued franchise development. The brand has been recognized among Franchise Times' Top 40 Smartest-Growing Franchises, Entrepreneur'sFranchise 500®, QSR Magazine's Top 50 Contenders and the Inc. 5000 list of the fastest-growing private companies in America.
