March 14, 2008 // Franchising.com // - (DENVER) – Dickey's Barbecue Restaurants and local restaurateur Martin Perkins announce their agreement to open Denver's third Dickey's Barbecue Pit. The restaurant will open in Lakewood at 3140 South Wadsworth this summer.
Perkins, who also owns and operates Dickey's restaurants in Centennial and Littleton, has been a Dickey's Owner/Operator for more than six years. Founded in Dallas, Texas in 1941, Dickey's Barbecue Restaurants are the nation's fastest-growing barbecue chain in the country with more than 90 locations in 15 states.
Perkins is a veteran of multi-unit restaurant management. He helped develop the concept of EZ's Burgers and Shakes and was a multi-unit manager for Mr. Gatti's throughout Austin and San Antonio. He became a fan of Dickey's nearly a decade ago when he stopped in to a Denver location and ordered the beef brisket, polish sausage and jalapeno beans.
"It was a delicious twist of fate – I loved it so much, I bought that same store four years later," Perkins exclaimed. "I have been extremely fortunate with Dickey's. With their knowledge of great barbecue and the mentorship I've received from Cappy Lawton [famed Texan restaurateur and developer], I believe this growth was inevitable."
Perkins added that he's adopted Lawton's philosophy of running a successful restaurant for his Denver stores. "Cappy taught me profits are only a result of doing things right. It's a simple concept – if you wouldn't eat it, don't serve it. If you don't want it, don't give it to a customer. Whatever it is, always do it right, first."
The new store is in a premium location near the Kohl's shopping center, one-half mile north of Hampden on Wadsworth.
"This is a location in a thriving area that sees more than 50,000 cars pass daily," said Perkins. "The location, the wonderful slow-cooked food that made Dickey's famous and hiring a great staff will create winning combination for success in Lakewood."
In addition to increasing Dickey's presence in Denver, Perkins has already made significant ties to the community by pledging to cater events for Children's Hospital in Denver, helping schools with silent auctions and offering discounts for the elderly, police and fire departments and school functions.
