September 16, 2026 // Franchising.com // KANSAS CITY, Mo. — The Big Biscuit®, a breakfast and lunch concept founded in Kansas City, today announced that Steve Zahn, the brand’s first franchisee, has signed a new franchise agreement to continue expanding The Big Biscuit’s footprint across Oklahoma. The agreement adds to Zahn’s existing development pipeline and reflects the continued momentum of a brand approaching its 40th location system-wide.
Since first bringing The Big Biscuit to Oklahoma, Zahn has grown into the concept’s most prolific operator, opening restaurants in Tulsa, Broken Arrow, Edmond, Owasso, Midwest City and Oklahoma City. With this new agreement, Zahn is moving toward his eighth and ninth locations, with development already underway in Oklahoma City and Norman.
“I have over 25 years of franchising experience, and I was the first franchisee for The Big Biscuit. I currently have seven locations open in Oklahoma and am working on my eighth and ninth,” said Zahn. “I was first attracted to The Big Biscuit because the team is really strong operationally. We offer full service, but our ticket times average just six minutes. The systems they have in place make that possible. Between the daytime hours, product quality and the overall operation, the brand has a lot to offer. We also have a great relationship with corporate. They value their franchisees and are thoughtful about who they choose to expand with. That’s hard to find in franchising these days.”
Zahn’s new agreement comes during one of the most active growth periods in The Big Biscuit’s history. Over the past six months, the brand has opened new restaurants in Maize, Kansas; on Hydraulic Avenue in Wichita, Kansas; and in Rogers, Arkansas. These openings extend the concept’s reach into new markets while strengthening its presence in existing communities.
