Ziggi's Coffee Continues Southern Minnesota Expansion with Third Location from Multi-Unit Franchisees

Ashlee and Joseph Edman bring the Colorado-based brand to Redwood Falls, deepening the brand’s presence in rural markets

June 02, 2026 // Franchising.com // REDWOOD FALLS, Minn. — Ziggi's Coffee is expanding its footprint in southern Minnesota as multi-unit franchisees Ashlee and Joseph Edman prepare to open a new drive-thru location in Redwood Falls on June 9. The location at 321 E. Bridge St. marks the couple's third Ziggi's Coffee franchise, following successful openings in Montevideo and Granite Falls.

The Edmans, who also own a local construction business, first franchised with Ziggi’s as part of a longer-term strategy to build a portfolio of locations across the region. The Redwood Falls opening reflects the brand’s growing appeal among multi-unit operators looking to bring a differentiated beverage concept to smaller and mid-size markets.

"Opening a third location is incredibly special," Joseph Edman said. "It reflects the trust that communities have placed in us. There's something very rewarding about building something meaningful in a place where it truly makes an impact."

The Redwood Falls location serves a rural market of roughly 5,000 residents, with surrounding communities within a 15- to 20-mile radius regularly funneling into the city. For Ziggi's, the opening reflects the brand's broader expansion strategy – growing through operators who know their markets and are committed to building long-term within them.

The opening comes as Ziggi's marks a significant milestone: the Colorado-based brand is celebrating its 10th year of franchising in 2026, growing from a single neighborhood coffee shop founded in 2004 to a national brand with more than 115 locations across 23 states and more than 200 additional locations in development.

Ziggi's model – which emphasizes speed, customization and a broad menu spanning specialty coffee, Dirty Sodas, Energy Infusions and food options – has proven well-suited for operators targeting markets underserved by larger national chains. The brand has earned recognition in Entrepreneur magazine's Franchise 500 and the Inc. 5000 list.

The Redwood Falls location will be open Monday through Friday from 6 a.m. to 7 p.m., and Saturday and Sunday from 7 a.m. to 7 p.m.
