The Wonders of Polyphenolic Mojo
Scientists are only beginning to understand the powers of the mystical bean because the coffee bean is an incredibly complex food, containing over a thousand different chemical compounds.

In the past year, Chemist Joe Vinson (University of Scranton in Pennsylvania) included the coffee bean in his study of the antioxidant content of 100 different food items. Vinson concluded that Americans get more polyphenolic antioxidants from coffee than from any other food source. The average American adult consumes 1,299 milligrams of polyphenols daily from coffee. The next closest competitor was tea at 294 milligrams.
This is good news for the 100 million Americans who consume coffee on a daily basis. Antioxidants are molecules that aid in the human body’s ability to battle cancer and protect against a variety of other ailments including heart disease and strokes. The study also has some important implications for professional athletes and weekend warriors—polyphenolic antioxidants assist in repairing the muscle cell damage that inevitably occurs with exercise.
Tapping Java Juju
Perhaps the more obvious benefit of coffee is the natural “jolt” people feel after they drink it. Studies show that drinking coffee staves off sleepiness, and increases other brain functions like attention, task management and concentration. Researchers believe that this is because the caffeine in coffee triggers the release of dopamine in the brain and binds to receptors that normally accept adenosine, a neurotransmitter that signals brain cells to quiet down their activity. This information piqued the interest of the United States Army—earlier this year the Walter Reed Institute of Research (WRAIR) finished testing “Stay Alert” caffeine gum on fatigued military personnel. The gum contains about the same amount of caffeine as a cup of coffee (100 mg).
Lead researcher from the Department of Behavioral Biology at WRAIR, Dr. Gary Kamimori, commented that after conducting three studies concerning the safety and effectiveness of the gum, he concluded that the caffeine in the Stay Alert gum improves alertness and physical and mental performance.

Three hundred cases of Stay Alert gum went to soldiers in the field in 2004. Kamimori reports that response to the gum from troops in the U.S. and in the Middle East has been positive. Although Stay Alert gum is not available to the general public, the same benefit can be derived from one or two cups of quality JO.
