Nick-n-willy's World Famous Pizza Introduces Family Style Fast-casual Restaurant Model
October 01, 2007 // Franchising.com // Denver, Colorado -- Nick-N-Willy's Franchise Company LLC, featuring a distinctive selection of hand-tossed freshly made signature pizzas, announces the launch of its new family style fast-casual restaurant.
The new fast-casual restaurant model was designed for today's busy working professionals and their families. The restaurant's décor provides a pleasing ambience, and restaurants will range in size from 1,200 to 1,600 square feet, with the capacity to seat 26 to 40 guests. Each restaurant will prepare pizzas in a custom Woodstone gasfired brick oven, dedicated to the art of creating a traditional Italian style pizza. In addition, restaurants will include televisions as an entertainment source and, in some cases will serve beer and wine. Restaurants also feature an 4-foot open-air cooler that offers consumers a choice of fresh made pizzas, salads and cold beverages to purchase on-the-go.
The "fast-casual" restaurant segment is a hybrid of the fast-food and traditional sit-down eating experiences. Today's more educated, health-conscious consumers are requiring healthier, better tasting food from the fast-casual restaurants they visit, and Nick-NWilly's offers a selection of healthy, gourmet style pizzas to satisfy its consumers.

"The launch of this new model has also provided us with an opportunity to retrofit a number of our existing franchise stores and provide them the opportunity to increase their business," said Weil. In addition to the Company's original business stream of take-n-bake pizzas that are prepared fresh and baked at home, the new restaurant model will have the capacity to handle two new revenue streams: baked dine-in and baked takeout pizza.
