Red River Residents Get First Peek at New ‘Fast Casual’ Eatery Offering NEW Gourmet Pizzas and Specialty Salads along with Oven-Baked Sandwiches and ‘Create Your Own’ Pizza or Salad

October 25, 2011 // Franchising.com // AUSTIN, TX– Gatti’s Pizza, the forty-two year old pizza brand known for their famous pizza throughout the Southwest, Southeast and Midwest, announced today the debut of their new ‘fast casual’ restaurant concept, Gatti’s®. They will open its doors in central Austin at 1000 E. 41st in the Hancock Shopping Center at Red River, Tuesday, October 25th. The new Gatti’s location is the first of six planned to open in Austin, and features signature pizzas, made from scratch daily, and specialty salads joined with oven baked sandwiches and ‘create your own’ pizzas and salads, giving guests the ultimate in choice.

The new 2400 square foot fast casual eatery was designed by architects Trapp Associates LTD. with today’s busy consumer in mind. Gatti’s offers fresh food and customized service in a warm and inviting atmosphere for those in a hurry or to enjoy as a gathering place for family and friends with seating for 70. Balancing contemporary and Old World Italian décor, the store features a decorative stained concrete flooring, Mediterranean inspired tile and wall coverings, and marble accents throughout. Wood chairs and butcher block style tables extend the theme.

As guests join the queue, they are partnered with a specially trained artisan, one-on-one, who helps them choose from four pizza crust options including Gatti’s original crust, thin, whole grain wheat, or gluten free vegan and choose from five different freshly prepared proprietary sauces and twenty-nine premium toppings to make their custom pizza. Guests may select a ‘create your own’ salad with over twenty-two fresh toppings and nine dressing choices, and watch as it is being freshly prepared by their devoted artisan who manages their custom order through the whole process.

“When the first Gatti’s Pizza opened some 40 years ago, people traveled from miles away to try our famous pizza,” said Michael Mrlik, president, Gatti’s Pizza. “Gatti’s quickly became known for fresh flavorful pizza that kids and parents have enjoyed and craved for years. We are excited to open our new fast casual concept on Red River and introduce craveable menu items along with our great pizzas in a format that gives our guests many more choices.”

The new Gatti’s brand is sporting a new logo which reflects the updated and fresh approach to making their food more convenient and providing consumers with new delicious choices. “Along with the brand’s visual update, the new Gatti’s at Hancock Shopping Center will use only ‘green’ compostable recycled to-go utensils, napkins, cups and bowls; pizza boxes and carryout bags to protect the environment,” says Mrlik.

Restaurant veteran Jake Buckingham will manage the new Gatti’s restaurant which employed 25 members from the local community.
