Mellow Mushroom Pizza Bakers is Opening a Second Location in Louisville, Kentucky, in the Heart of St. Matthews

Fresh baked pizza, endless varieties of craft beer and artwork that taps into the history of St. Matthews

August 27, 2012 // Franchising.com // Louisville, KY - Mellow Mushroom Pizza Bakers is proud to announce their newest opening in Louisville, Kentucky, in the heart of St. Matthews, on Monday, September 3rd. This Mellow, which marks the second location for Louisville, is located at 3920 Shelbyville Road.

The owners of this location, Jason Nase and Damon Coates, are thrilled to open a Mellow in St. Matthews: “The St. Matthews area is a great fit for Mellow Mushroom. It has a great history, charm and well-established neighborhood feel, while still being a part of a big city,” explains Nase.

The menu features a variety of pizzas, hoagies, salads, calzones and appetizers. Options for vegetarians, vegans, kids, and those on a gluten-free plan are also available.

The St. Matthews’ Mellow Mushroom location, deep in the heart of an older neighborhood of Louisville, Kentucky, allowed the owners to tap into the history of the region. Passersby will be treated to antique items and hand carved wooden statues on display in the large rollup windows which introduce the soul of the store to the street. Once inside, guests are greeted with reinvented antiques and found objects that have been repurposed in unique ways to house retail merchandise, offer ambient lighting and video.” Reclaimed wood from the original building can be found on the floor and ceiling joist. Metal sculpture dragon flies with illuminated Edison bulb tails guide you to the bar, reclaimed chandeliers add eclectic flavor to the ceilings and booth seating, and a variety of found-object art adorns the walls for visual impact throughout the restaurant.

Suiting any diner’s needs, this Mellow has 250 plus seats and includes a party room for up to 35 people, a patio and garage doors that open to give a great open air feel. This location also features a full service bar with a wide array of liquor, craft beer and wine options. Join the Mellow Mushroom Beer club and make your way through 40 drafts and an endless variety of bottled beer, while receiving member-only rewards along the way. Throughout the week, you can catch trivia nights, live music and sporting events on 13 TV’s.
