April 10, 2014 // Franchising.com // Sacramento, CA – Jimboy's Tacos, a fast-casual American-style Mexican food restaurant chain, and sponsor of the Sacramento Kings, will launch its 60th Anniversary celebrations at the Sacramento Kings game tonight as they thank their customers throughout their 60 years of business.
Margaret Knudson, wife of Jimboy's Tacos founder Jim Knudson, will be in attendance as well as daughter and CEO of Jimboy's Tacos, Karen Knudson Freeman, and son Scott Knudson.
"This is a great way to begin thanking the Sacramento community for embracing us over the years," said Karen Knudson Freeman. The big celebration day festivities will be held on May 21, 2014.
Jimboy's Tacos recently partnered with real estate company, The Krrish Group, to bring Jimboy's Tacos to India. The Krrish Group, as Master Franchisee of Jimboy's Tacos, will launch the multi-store opening in India later this year. The first restaurant is slated to open in September 2014, with 7-10 more restaurants opening in the next two years.
Established in 1954, Jimboy's Tacos had humble beginnings, debuting in a pop-up trailer on Kings Beach in Tahoe, California. Traffic picked up, fueled by positive word-of-mouth, and a trailer developed into almost 40 locations throughout the Sacramento and Tahoe areas.
In 2012, the brand revealed that it would remodel all of its nearly 40 restaurants to an adventure-themed prototype by the end of 2016. The adventure aspect reinforces the chains branding efforts around a fun, entertaining place to eat than its previous incarnation. The American-style Mexican food restaurant chain will continue to focus on the food, using fresh, natural premium ingredients, and preparing everything fresh daily.
