la Madeleine Announces Promotion of Susan Dederen to Vice President of Culinary Operations

Company Leader Recognized for Decades of Influence on Renowned French Country Inspired Bakery-Cafés

Dederen has been the culinary face of la Madeleine for two decades as senior director of culinary. She began her career with la Madeleine as a pastry associate in Dallas but quickly became a manager at the Mockingbird Lane location, and has shown creativity and extraordinary business sense in every facet of her work for la Madeleine.

Susan's leadership has produced the introduction of many beloved menu items such as the authentic Blackberry Cream Cheese Croissant, the sweet Roasted Pear and Prosciutto Salad and the Savory Crepes and Pastas and the Chicken Parisien Sandwich. Her continued efforts to deliver new and exciting choices to la Madeleine's loyal fans are as unceasing as her constant refining of daily operations.

"From our very first day, la Madeleine has always made our food with our guests in mind. Using real, wholesome ingredients and writing our recipes using classic French techniques has let us craft unique products that have our guests coming back time and time again," explained Dederen. "Our Inspiration comes from many diverse regions of France and the foods they serve. From Paris to Provence we take the local favorites and introduce them to our guests. We change our products seasonally, which allows us to use our ingredients at their peak. We cook and bake in small batches, because that's how we receive our guests."

Dederen's commitment can be felt across nearly every aspect of the brand. Not only has the menu constantly improved under her leadership, but advancement in equipment testing and selection, kitchen layout design and other aspects of daily café operation have benefitted directly from the care and attention to detail evident in her tireless work ethic. Her background in operations has been essential for the success la Madeleine has enjoyed.

Dederen graduated from the College of Hospitality at Johnson and Wales University.
