Costa Vida Makes Waves with New Opening in Rancho Cordova on June 2nd

The Fresh Mexican Favorite Opens Second of 12 Locations Planned for Sacramento Area

May 22, 2014 // Franchising.com // SACRAMENTO, Calif. – As Costa Vida Fresh Mexican Grill continues to gain popularity across regions of the United States, the fresh Mexican grill is responding to increased demand in California with plans to expand their footprint in Sacramento. With one location already open in Roseville, Costa Vida owners Caroline Beal and Jessica Payne will be opening the second of 12 locations planned for the greater Sacramento area.

Opening their doors on June 2nd in Rancho Cordova, the local women will be introducing Costa Vida's eclectic menu inspired by the cuisine and flavors of Mexico. To celebrate the opening, Beal and Payne invite the local community to the new restaurant at 10831 Olson Drive for a summer celebration. Kicking off at 11:00AM, the restaurant will be awarding one free entrée each week for one year to the first 30 guests in attendance, and one free entrée per month for a year to the next 30 guests to attend.

"The food itself is what drew us to become involved in the business to begin with, and as we continue to see the increased demand from consumers in the area, we realize that we clearly have a shared passion," said Beal, co-owner of the Costa Vida in Roseville and new location in Rancho Cordova. "Having lived in this area for years, we couldn't be more excited to celebrate the summer opening with our friends and neighbors while introducing new customers to the fresh flavors inspired by Mexico."

Costa Vida food is made from scratch every day. The menu is inspired by the local cuisine of Mexico and features made-to-order burritos, tacos, enchiladas, quesadillas, salads and nachos. Protein choices include sweet pork, grilled chicken, shredded beef, raspberry chipotle chicken, grilled steak, Mahi Mahi fish and shrimp. Entrées are served with cilantro lime rice and black, refried or pinto beans. The homemade guacamole, sauces, and salsas can be used to customize any order. They include Salsa Fresca, Pico de Gallo, Honey Habanero Salsa and Mango Salsa.

With the exception of the flour and wheat tortillas, tres leches and key lime pie desserts, Costa Vida's menu items are gluten friendly.

The Costa Vida location in Rancho Cordova will be open Monday through Saturday from 10:30am – 10pm, and on Sundays from 11am – 9pm. To reach the restaurant, call 916-631-4229.
