August 03, 2016 // Franchising.com // FAIRFAX, Va. – Firenza Pizza, a fast-casual restaurant that offers custom, made-to-order artisanal pizzas, recently inked its first West Coast development deal, adding four new stores in Santa Clara County, CA.
The restaurants will be developed over the next two to three years with the first scheduled to open within the next 90 days in Los Gatos at 681 Blossom Hill Rd.
“The Bay Area is experiencing an explosion of fast-casual concepts and we are extremely excited to get in on the action,” said Ling Hullon, who signed the franchise agreement with partner Jenny Yie. “We’re confident that this community will be blown away by Firenza’s quality products, speed of service and level of customization.”
Hullon has owned and operated a real estate brokerage with Yie since 2003. A native of Malaysia, she moved with her family to the United States 20 years ago after her husband had to relocate for work. Her fascination for food began while growing up on a farm, assisting with her father’s business of growing vegetables and rearing chickens for their eggs. Using the honorable business practices instilled by her father, she is hoping to turn Firenza into the go-to fast casual pizza concept in Santa Clara County.

At Firenza, customers can pick and choose from nearly 40 toppings – six signature sauces, seven cheeses, nine meats and 17 veggies – and watch their customized pies assembled right in front of them. For those customers who don’t want to create their pizzas from scratch, Firenza also offers eight, chef-inspired signature pizzas.
The pizza dough is made in-house daily and hand-stretched to order right in front of the customers. Once the pizza dough is stretched, customers can customize their pizzas with unlimited toppings for one low price.
Other menu items include oven baked wings, meatballs and custom salads. Beverages include beer and wine, Mexican Coca-Cola, and Coke freestyle fountain drinks.
