Flying Biscuit Café signs franchise agreement for Huntersville, expanding in the Charlotte market

September 23, 2026 // Franchising.com // Two longtime guests of The Flying Biscuit Café have signed a franchise agreement to bring the all-day breakfast brand to Huntersville, N.C., in the greater Lake Norman area north of Charlotte. David Mumby and Jimmy Mumby signed for one café, with site selection underway. An address and opening date will be announced once a lease is signed.

David Mumby is a certified public accountant whose career has been in accounting and finance.

Jimmy Mumby is a project management professional with a background in project management, real estate and facilities. The ownership group is bringing in kitchen experience: Denise Mumby, David Mumby's mother, will be involved in day-to-day operations and brings more than 20 years in food and hospitality, including 12 years managing a fast-food breakfast concept.

The partners came to the brand as customers first, visiting the Park Road Shopping Center café in Charlotte regularly for years. They chose Huntersville and the greater Lake Norman area for their first café because it is growing and draws families, professionals and people who make a habit of getting together over a meal. Huntersville sits about 15 miles north of Charlotte on Lake Norman.

“We chose Flying Biscuit because we believe it’s the best in its class, and we’ve always loved the food, personality and welcoming atmosphere of the brand,” said David Mumby, franchisee.

“We’re excited to combine our love of breakfast and brunch with our professional experience to bring a place to Huntersville and the greater Lake Norman community where people can enjoy great food and drinks, gather with family and friends, and feel at home.”

The Huntersville agreement covers a single café, and the partners say they hope to own and operate three to five Flying Biscuit cafés in and around Charlotte within five years. They have also said they would like to introduce the brand to Asheville, N.C., in the future. David Mumby is a graduate of the University of North Carolina at Charlotte and Jimmy Mumby a graduate of Davidson College.

“Some of our best operators walk in as regulars first, and David and Jimmy have been sitting in
our Park Road dining room for years,” said Andrew Scherzer, partner and director of franchise development for Flying Biscuit Franchising. “They know what a Saturday morning rush actually looks like from the guest side, and they’re pairing that with finance and construction discipline and a family member who has run breakfast kitchens. The Carolinas have been a steady growth market for us, and Huntersville gives us room to keep building north of Charlotte.”

Recent openings and deals The Huntersville agreement follows a run of activity across the brand’s footprint. Owner-operator Chris Compton opened a downtown Knoxville, Tenn., café at 327 W Summit Hill Dr SW on Saturday, Sept. 12 — his second Flying Biscuit, after opening the brand’s first Tennessee location in Turkey Creek in May 2025. In Orlando, Fla., John and Gisela Terranova are finishing construction on the brand’s first café in that market, on US-192 near Celebration.

On the development side, franchise partners Latrell Hayes, Kennon “Kip” Barber and Randy Barnes signed the brand’s first Missouri lease in the St. Louis metro, its first café outside its core Southern footprint, with an opening targeted for the fourth quarter of 2026. Closer to Huntersville, Tahir Rafiq and his wife and franchise partner, Zinnia Tahir, signed a lease in North Raleigh for their fourth Flying Biscuit, targeted for the first quarter of 2027.

Also in the past two months, Matt Thomas signed a multi-unit development agreement for two cafés in Palm Beach County, Fla.; Shreya Patel signed the brand’s first Nashville franchise agreement; father-and-daughter team Larry Bell and Courtney Bell signed for the first café in the Tri-Cities region of Tennessee; and Keisha Carter signed a franchise agreement and lease for a café serving McDonough and Henry County in the Atlanta market.
