Fast-casual Mexican Restaurant Celebrated Opening with Dollar Burrito Night

June 18, 2012 // Franchising.com // Sioux City, IA - Tim and Beth McCabe opened the first Pancheros Mexican Grill in Sioux City on Tuesday, May 22 at 2400 Hamilton Blvd.

For the McCabes, Pancheros will be a family-run business. Their oldest daughter, Rachel Vickery, will be the general manager and operating partner, and Beth will oversee the operation.

“We were introduced to Pancheros while going to Iowa City for football and basketball games,” Tim said. “We loved the food and witnessed the restaurant’s ‘cult’-type following firsthand and wanted to bring it to Sioux City.”
