HoneyBaked Summer Wedge Salad (serves four)
- Prepare four slices of HoneyBaked Thick Cut Sweet Glaze Bacon according to directions. Allow to cool completely, then crumble.
- Wash and remove the core from a head of iceberg lettuce. Drain well, cut into quarters and set aside on four plates.
- Wash and dry ½ cup blueberries.
- Crumble three tablespoons of blue cheese into a bowl. Stir in ¼ cup plain yogurt, three tablespoons of Mascarpone cheese and one tablespoon of milk until combined, but still chunky. Drizzle each salad wedge with the dressing mixture.
- Sprinkle each wedge with the bacon crumbles and blueberries, then serve.
