Bacon Bros. Looks to Take a Bite Out of Columbia’s Food Scene

July 28, 2017 // // GREENVILLE, SC - Columbia's bustling food scene may soon be getting a new addition. Bacon Bros. Public House is looking at Columbia for its next expansion wave.

The Greenville, South Carolina-based restaurant - which has locations in Greenville and Houston - focuses on farm-to-table, made-from-scratch barbecue and meat-centric meals.

“Known more for college football and state politics, Columbia is in the midst of a breakout when it comes to good eats. New, innovative restaurants are popping up all over, transforming the local dining scene into one of the most dynamic in the region,” said Mike Porter of Bacon Bros. “This is a city that savors the fresh and the new, and we anxiously look forward to becoming a part of the amazing restaurant scene.”

Bacon Bros.’ menu - which includes pork shoulder tots, a crispy pork shank, pork chops and bacon mac 'n' cheese, as well as barbecue sandwiches and burgers - is seasonal and locally sourced, with a minimum of four menu changes a year. However, some items are available year-round, including the made-daily BBQ, Pimento Cheese with bacon jam, Bacon Caramel popcorn, and an extensive list of handhelds such as corned beef Reuben, pulled pork sandwich, burgers, and bratwursts.

The restaurant also features a cure room near the dining room where guests can look in and see the meats hanging from the ceiling.

“We have a great restaurant, a great brand, and a great concept that is doing well,” said Porter. “We’re confident it has legs and we can recreate this in other places like Columbia.”

With a franchise fee of $50,000, the total investment to own and operate a Bacon Bros. franchise sits between $739,000 and $1.5 million.

As far as vetting prospective franchise partners, Bacon Bros. treats the process as if they’re seeking new members for an elite club. “If we award you a franchise, it says become a Bacon Brother, and we actually mean that. You’re becoming part of the club. You’ve got to be as passionate about our brand and our food and our clients, the customer services, and everything else, as we are,” Porter said.
