The Big Biscuit Signs Lease for Columbia Location

July 16, 2026 // Franchising.com // The Big Biscuit has announced a signed lease for its latest location coming to Missouri. The restaurant will be situated in Columbia and is expected to open in late 2026.

This will be the Umstattd family’s first Big Biscuit location, and they see significant growth opportunities ahead. Their franchise journey began when Kevin Umstattd opened his first Sonic Drive-In. Today, the family operates more than 30 Sonic locations across multiple states. Attracted to the morning daypart and streamlined operations established by The Big Biscuit VP of Operations, Scott Jayne, The Umstattds have been increasingly interested in diversifying their portfolio as they watched The Big Biscuit’s steady growth over the past several years.  The Umstattds have a strong alignment between their operational culture and The Big Biscuit’s people-first, community-centric values.

Second-generation franchisees, Corbin and Miles Umstattd, were drawn to The Big Biscuit’s high-quality food, genuine hometown hospitality, and commitment to people. The brothers will together lead the launch of the Columbia restaurant, with Miles overseeing training, daily operations, and team development, and Corbin managing marketing, HR, and community engagement.

The brand was founded in 2000 and has expanded to 32 locations across Kansas, Missouri, Oklahoma, and Arkansas.
