High Volume, Fast Casual Chain Sells Three Multi-Unit Deals In First Few Months of Franchising

Sonoma Chicken Coop Expanding on East and West Coasts

August 29, 2008 // Franchising.com // San Jose, CA,— Sonoma Chicken Coop (SCC), the Northern California based, high-volume, fast casual chain is expanding beyond their West Coast roots. The company has secured three multi-unit franchise deals in their first few months of franchising, bringing eight new restaurants to California and three to New Jersey. SCC expects to have two open units in Northern California and one in Northern New Jersey by early 2009.

"Sonoma Chicken Coop generates higher volumes than any other fast casual restaurant chain that I have ever seen," says Dan Rowe CEO of Fransmart, the Alexandria, Virginia based franchise development company that helps SCC grow nationally. "I am not surprised about their rapid growth- Sonoma Chicken Coop is extremely appealing to both fast casual and casual dining operators."

The three franchise deals will bring eight new restaurants to northern California specifically in the Bay Area and Sacramento. Three more will open on the east coast in northern New Jersey. The franchisees are currently looking for real estate in high-density counties such as Bergen, Passaic and Morris.

Sonoma Chicken Coop was founded in 2002 by Jeff Starbeck, Bob and Bonnie Ray and MacKenzie Davis in downtown San Jose, California. It was named for the world-famous California wine region and also their signature rotisserie chicken menu items. Since the original store opened over five years ago, the fast-casual restaurants, which range in size from 4,500-8,000 square feet, have enjoyed high average unit volumes of over $4.5 million per store.

Sonoma Chicken Coop serves a broadly appealing menu of pizza, pasta, entrée salads, sandwiches on house-made bread, steaks, ribs, fish, rotisserie chicken as well as chef quality appetizers and desserts. All restaurants serve alcohol. Restaurants have a 50/50 lunch/dinner split and a $22 check average.

The restaurant has garnered multi-year rankings in the Best of Silicon Valley for Best American Restaurant, Best 'Dazzle for Dimes' and Best Fondue.
