Paul Lyons, Beef Jerky Outlet Franchise Vice President, was interviewed on the Opportunity World Franchising Show by Wade Taylor on wsradio.com. In the first part of the interview Paul discussed the evolution of the modern jerky market and the characteristics of a typical outlet store. According to Paul, the jerky and smoked meat market segment has grown remarkably in the last 15-20 years. Consumer demand has driven jerky producers to dramatically increase the range of flavors and varieties available.

Traditional beef jerky, while retaining popularity, has been joined by numerous specialty flavors and seasoning combinations. New flavors like Cherry Maple, Honey Barbeque, Teriyaki and Cajun have developed a loyal following. Especially popular are the hot, super hot and hotter-than-hot flavors favored by younger jerky aficionados. Paul says, "The hot and spicy crowd just can't get it hot enough. We also sell specialty hot sauces, some of them are off the chart."

The market demographic has also changed."Jerky isn't just for guys or camping. Beef jerky is a favorite snack food for women and kids, any time, especially on the go. The ladies really like our premium turkey jerky." Paul indicates that the expanding market segment is one reason why the Beef Jerky Outlet does regular in-store sampling.
