Kimpton Shorebreak Resort Announces New Culinary Team and a Fresh Spin on Coastal Menu

Huntington Beach Hotspot Brings in New Talent to Deliver an Amplified Dining Experience and Creative New Options

December 06, 2019 // Franchising.com // Huntington Beach, Calif. - Kimpton Shorebreak Resort announced today three new additions to the culinary team - Eric Kramer as director of food & beverage, Tanner Johnson as beverage manager and Gilbert Laurie as executive chef - as well as new spin on the popular menu at the coastal resort’s restaurant, Pacific Hideaway.

Spearheading the culinary team, Kramer will oversee all aspects of the resort’s dining experiences, from menu concept creation to catering services for special events and daily programming. An accomplished leader, with over two decades of experience in hospitality management, Kramer previously served as Director of Operations and Managing Partner of Bounce Sporting Club in Chicago, where he managed the beverage program and led all food and beverage training for staff.

With an international background and experience working at a Michelin restaurant in Spain, Chef Gilbert will be responsible for leading the kitchen and continuously bringing fresh ideas to the table, including new food offerings that capitalize on trending ingredients and bold flavors. Chef Gilbert has been a part of the Pacific Hideaway culinary team for two years, previously Executive Sous Chef, and has expansive knowledge on diners’ preferences and kitchen processes. Prior to his roles at Pacific Hideaway, he spent 11 years leading Opah Seafood Grille, where he aided in the successful growth of the restaurant group through strong leadership and creative direction.

As beverage manager, Johnson will be responsible for designing specialty cocktail menus and bringing out-of-the-box beverages to life. With over a decade of food and beverage experience in California and Arizona, he brings bold mixology and leadership skills to the culinary team, as well as a passion for building partnerships within the community to amplify offerings to guests.

Specially curated by the new culinary team, the brunch menu now features Breakfast Tacos, Burrata Salad and Grandma’s Chilaquiles. For a boozy brunch, guests can indulge in the new vodka-based cocktail, Skinny Beach, or enjoy bottomless mimosas. The dinner menu has been amplified with new culinary delights such as Sweet & Spicy Hot Wings, Seared Diver Scallops, Sugarcane Beef Tenderloin, Pan Seared Ribeye and Crispy Pork Belly.
