New Brand Launches

Top That! Pizza Opens First Franchise
Top That! Pizza has opened its first franchised unit, in Tulsa. Lori Walderich, founder and co-owner of the brand, said four more units are under construction with dozens more in the pipeline. Six locations are set to open by year-end, with five more scheduled to begin construction in the first half of 2012, in Oklahoma, Texas, and Missouri. Top That! offers custom, personal-sized pizzas for a set price ($6.99 for a 10-incher, and $3.49 for a children's pizza). Some key differentiators for the concept: 1) the two prices remain the same no matter how many toppings a customer may pile on; 2) the pizza creation process resembles a fast food sub shop, with customers choosing their crust, sauce, and toppings; and 3) hot pizzas are ready in under 3 minutes. For drinks, the brand offers Coca-Cola's Freestyle touch-screen fountain dispenser, which can serve up more than 100 varieties of beverages. "People have told us they'll drive 15 miles to create their own pizza and custom drink. Now they're asking us when we'll build a store near them," said co-owner Jeff Walderich.

Domino's Founder Launches Gyrene, a New Burger Delivery Concept
Domino's Pizza founder Tom Monaghan has launched Gyrene Hamburger, a military- burger concept. The restaurants will offer only two types of gourmet burgers: a classic with ketchup, mustard, and pickle, and a deluxe with lettuce, tomato, and mayo (both will feature two beef patties, bacon, and cheese). Prices will start at $5.99, and in an interesting twist, there will be no sides or drinks and no seating. Delivery will be free by employees dressed in camouflage clothing. The 74-year-old former Marine said the name was inspired by his military background (Gyrene is a nickname for a Marine). Monaghan said he plans to open the first Gyrene in two months in Naples, Fla., and the second 30 days later. Monaghan, former owner of the Detroit Tigers, sold Domino's in 1998 when the chain had more than 6,000 locations.

SC Asian To Debut in San Francisco
SC Asian, a new hybrid fast-casual restaurant with full-service elements, is set to debut on Nov. 14 in San Francisco in the food court of Macy's, near Chinatown. "How do I feel about being three blocks from the most dynamic Chinatown in the U.S.? I feel great about it," said company president Greg Carey. The brand is the third from Flat Out Crazy Restaurant Group, which operates Stir Crazy Fresh Asian Grill (casual) and Flat Top Stir Fry Grill (fast casual). Guests will order at the register, find a table, and "food runners" will deliver their meals. From there, a server will wait on diners who want to order more drinks and dessert, and will accept credit card payments on a handheld device. Carey says the new concept, which allows for a flexible footprint, could fit into about 100 Macy's properties nationwide, as well as airports, food courts, and freestanding units. Flat Out Crazy, based in Chicago, operates 17 Stir Crazy locations in 10 states and 17 Flat Top units in 5 states.

Big Plans

Krystal Plans to Double Units in 5 Years--and Sell the Company by Year-End
The Krystal Co., founded in 1932, wants to double the number of restaurants it owns or franchises to 760 over the next 5 years. One wrinkle: a planned sale of the company. "We're halfway through the process," said CEO Fred Exum. "The plan is to complete the process by the end of the year." Krystal, which reportedly has closed more than 40 restaurants in recent years, is now counting on consumers seeking lower prices, its purchases of undervalued properties since 2008, and smaller, more affordable models to drive growth, including the "Krystal Too" storefront model that can be sited in strip malls or other new types of locations for the brand. The new, smaller designs cost about $500,000 less to build than a typical Krystal, bringing the cost for a new restaurant down to about $1 million, according to the company. The chain has opened six restaurants so far in this year, in Chattanooga, Tenn., Tampa and Jacksonville, Fla., Gulfport, Miss., Millidgeville, Ga., and Murphy, N.C. Three more are scheduled to open in Florida soon, in Winter Haven, Plant City, and St. Augustine. Krystal is owned by a private investment group that includes Summerfield K. Johnston, Probasco and Patten family members in Chattanooga, and the Ingram family in Nashville. Based in Chatanooga, The Krystal Co. has 380 restaurants in 11 states.

H&R Block Looking To Add 100 More Locations
After adding more than 120 franchise offices in 2010, H&R Block is looking to add 100 more to its 11,000-office network. Block plans to grow its 55-year-old franchise network through two business models. One will focus on independent tax business owners who want to join its franchise network; the other is aimed at owners ready to retire or who are looking for an exit strategy and want to sell. The company offers an "Assisted Acquisition Program" to help franchisees identify customer acquisition opportunities, and provides financial support by paying up to 80 percent of the purchase price. H&R Block, the first company in the U.S. to offer tax preparation franchises, has more than 4,300 franchise locations among its 11,000 offices. The company says its average franchisee owns three locations and has been on board for more than 19 years.
