Years ago, the part-time personal trainer working full-time in the medical field realized it was time to practice what he had been preaching to clients and patients. Having been fit his whole life, Manning underwent his own lifestyle changes to gain weight and increase his body fat percentage. Spending months to reach his unhealthy goal, Manning then implemented a diet and exercise routine for himself and his clients to get fit together. And so ensued the first Fit2Fat2Fit journey.

Following a book deal, national buzz and social media celebrity, Manning is revisiting his journey with another purpose: To clarify the hype and expose the myths behind the gluten-free and gluten-friendly diet trend.

"All of the sudden, gluten-free has become the most popular diet to follow. I actually doubled my body fat in just two short months eating only gluten-free foods. Many substitutes for gluten are actually worse for the consumer and can lack nutrients." says Manning in reference to his current Fit2Fat2Fit journey exploring the challenges and benefits of a gluten-free diet. "Through my journey, I'm educating people on how to eat a gluten-friendly diet the healthy way. My wife and I travel often and consequently need to eat out a lot. Made from scratch every day, Costa Vida menu items are created with ingredients that consumers recognize. The menu features made-to-order burritos, tacos, enchiladas, quesadillas, salads and nachos. Protein choices include sweet pork, grilled chicken, shredded beef, raspberry chipotle chicken, grilled steak, Mahi Mahi fish and shrimp. The homemade guacamole, sauces, and salsas that can be used to customize any order, include Salsa Fresca and Pico de Gallo.
