Bacon Bros. Public House Eyes Denver’s Booming Food Scene

Southern-inspired restaurant focuses on farm-to-table, made-from-scratch barbecue and meat-centric meals.

September 12, 2017 // Franchising.com // GREENVILLE, SC - Denver’s bustling food scene may soon be getting a new addition. Bacon Bros. Public House, a farm-to-table, southern-inspired restaurant concept with a focus on bacon-inspired and other meat-centric meals, is looking at The Mile-High City for its next expansion wave.

“Over the past few years, Denver has ranked at or near the top of virtually every U.S. index there is - The best city for singles. For millennials. For entrepreneurs. For outdoorspeople,” said Anthony Gray, co-founder and Executive Chef of Bacon Bros. “It was only a matter of time before outsiders discovered the city’s dynamic dining scene as well. This is a city that savors the fresh and the new, and we anxiously look forward to becoming a part of the amazing restaurant scene.”

Although nothing has been confirmed for Denver just yet, Gray believes Bacon Bros. can open as many as three restaurants over the next few years and is eyeing various parts of the city, including Highland, Capitol Hill, Cherry Creek and City Park, among others.

The menu - which includes pork shoulder tots, a crispy pork shank, pork chops and bacon mac 'n' cheese, as well as barbecue sandwiches and burgers - is seasonal and locally sourced, with a minimum of four menu changes a year. However, some items are available year-round, including the made-daily BBQ, Pimento Cheese with bacon jam, Bacon Caramel popcorn, and an extensive list of handhelds such as corned beef Reuben, pulled pork sandwich, burgers, and bratwursts.

The restaurant also features a cure room near the dining room where guests can look in and see the meats hanging from the ceiling.

“We have a great restaurant, a great brand, and a great concept that is doing well,” said Gray. “We’re confident it has legs and we can recreate this in other places like Denver.”
With a franchise fee of $50,000, the total investment to own and operate a Bacon Bros. franchise sits between $846,500 and $1,312,000.

As far as vetting prospective franchise partners, Bacon Bros. treats the process as if they’re seeking new members for an elite club. “If we award you a franchise, it says become a Bacon Brother, and we actually mean that. You’re becoming part of the club. You’ve got to be as passionate about our brand, our food, our clients, the customer services, and everything else, as we are,” Gray added.
