Mex Midwest Signs 3-Unit Pancheros Mexican Grill Deal

Jeremy Music and Rob Bowers are expanding their multi-unit portfolio, signing a three-unit agreement with Pancheros Mexican Grill, and planning to open two locations in Illinois this year.
"As we diversify and grow our portfolio, our eyes are set on Pancheros," said Bowers, VP of operations and operating partner at Mex Midwest. "We seek out brands that deliver on operational excellence, supportive leadership, and craveable food that builds loyal communities. Pancheros checks every box."
The first location is expected to open in Princeton, Illinois, this summer followed by a second in Sterling this fall. Additional sites are under consideration across the Midwest as the group continues to expand.
Music and Bowers formally partnered in 2021 and bring decades of experience across brands, including Scooter's Coffee, Wingstop, Jersey Mike's Subs, Smalls Sliders, and Billy Sims BBQ. They have prior experience with McDonald's, Taco Bell, and Dunkin'.
