As for the ‘authenticity’ part, each Marugame Udon makes fresh udon noodles daily in an open, exhibition kitchen using wheat flour flown in regularly from Japan, and made with traditional noodle making, rolling, cutting, and cooking equipment imported from Japan as well.  Recipes for the broths, the tempura batter, and all other menu items on Marugame Udon’s menu remain true to the authentic ingredients and methods of preparation used in all Marugame Udon restaurants.
