“One of our secret weapons is our chef,” says Hodak. “But you don’t need a professional chef in your store to make it work. We have engineered it, so it is simple to manage and can be easily produced with the technology we set up in the kitchen.”

Hodak’s game-changing idea was inspired years ago by time spent in a Palestinian restaurant in his wife’s home country of Israel. As the lifelong New Yorker and self-professed foodie watched long boards filled with dough slide into a massive wood-fired oven and served straight from the Taboon to the table, he knew it was an experience he needed to bring back home. 

Building on Taboon’s success and demands for a quick-serve concept by the restaurant’s loyal followers, the founders opened Taboonette’s first flagship location in 2012. Now a popular Union Square mainstay, the restaurant will double as a base for training future franchisees set to soar with a solid investment opportunity.
