Hodak’s game-changing idea was inspired years ago by time spent in a Palestinian restaurant in his wife’s home country of Israel. As the lifelong New Yorker and self-professed foodie watched long boards filled with dough slide into a massive wood-fired oven and served straight from the Taboon to the table, he knew it was an experience he needed to bring back home.
