“The biggest achievement of the brand this year has been our same store sales,” says Philip Schram, chief development officer of Cincinnati-based Buffalo Wings & Rings. “We are at 5 percent, compared to the casual dining industry, which is closing at about .5 percent. We are 10 times better than our peers in casual dining.”

Founded in 1984, Buffalo Wings & Rings has tripled the average unit volume of existing restaurants since Schram and CEO Nader Masadeh-led management team acquired the brand in 2005. The company has continued to invest in its corporate team over the years, including the introduction of a new Chief Operations Officer in 2018, to provide support for the company’s franchise expansion and to further the company’s support of new and existing franchisees.
Buffalo Wings & Rings looks to trends, research and customer feedback for a competitive edge. This year’s ever-present eye on innovation included a pilot program that increased off-premise food sales from 10 to 20 percent. Schram credits the brand’s success on a culture of continuous improvement and a laser focus on both daily operations and future growth.
“Within our team, there are people who are very good at today’s execution and one guest at a time service and those who have the long-term vision,” Schram notes. “If you don’t have people that look forward, it is easy to lose ground.”
